sheep: from the salt-marsh to your plate"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">On the heights of Kep, between the sea and the hills, our farm raises a flock of sheep in semi-freedom, as well as a farmyard of geese and guinea fowl.<\/p>\n\n<p class=\"wp-block-paragraph\">This adventure was born from a simple idea: to offer high-quality local meat, raised naturally, while rediscovering a flavour we missed immensely\u2026<\/p>\n\n<p class=\"wp-block-paragraph\">A real lamb stew, just like at home.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A story born of a passion<\/h1>\n\n<p class=\"wp-block-paragraph\">Before being a livestock farm, Chamkar Damnak was first and foremost Chenda\u2019s garden.<\/p>\n\n<p class=\"wp-block-paragraph\">Having grown up in the countryside, she has always grown her own fruit and vegetables, favouring natural produce, far from intensive farming and chemical treatments.<\/p>\n\n<p class=\"wp-block-paragraph\">Animals naturally found their place in this adventure.<\/p>\n\n<p class=\"wp-block-paragraph\">We started with a few geese, then guinea fowl.<\/p>\n\n<p class=\"wp-block-paragraph\">The flock of sheep came later, driven by a very simple desire: to rediscover a meat that is almost impossible to find in Cambodia.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A simple philosophy<\/h1>\n\n<p class=\"wp-block-paragraph\">Our approach is based on a few essential principles:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>raise few, but raise them well;<\/li>\n\n\n\n<li>respect the animals\u2019 natural rhythm;<\/li>\n\n\n\n<li>favour a natural diet;<\/li>\n\n\n\n<li>produce locally;<\/li>\n\n\n\n<li>promote short supply chains.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">We are convinced that a flock is built over time, with patience and a great deal of care.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A farmyard full of character<\/h1>\n\n<p class=\"wp-block-paragraph\">Our geese quickly adapted to life on the farm.<\/p>\n\n<p class=\"wp-block-paragraph\">Robust, calm and particularly resilient, they are now an integral part of the estate.<\/p>\n\n<p class=\"wp-block-paragraph\">The guinea fowl, on the other hand, are much more independent.<\/p>\n\n<p class=\"wp-block-paragraph\">They like to explore the surroundings, sometimes lay eggs at the neighbours\u2019 and regularly force us to go in search of their eggs.<\/p>\n\n<p class=\"wp-block-paragraph\">Temperamental\u2026 but delicious.<\/p>\n\n<p class=\"wp-block-paragraph\">They all roam freely among our crops:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Kampot pepper;<\/li>\n\n\n\n<li>turmeric;<\/li>\n\n\n\n<li>ginger;<\/li>\n\n\n\n<li>galangal.<\/li>\n<\/ul>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A rare type of farming in Cambodia<\/h1>\n\n<p class=\"wp-block-paragraph\">Sheep remain an uncommon animal in Cambodia.<\/p>\n\n<p class=\"wp-block-paragraph\">Goats are easy to find in the countryside, but sheep farms are very rare.<\/p>\n\n<p class=\"wp-block-paragraph\">Our first sheep came from a Cham neighbourhood located northwest of Phnom Penh.<\/p>\n\n<p class=\"wp-block-paragraph\">We started with only about ten animals.<\/p>\n\n<p class=\"wp-block-paragraph\">The climate in Kep suited them perfectly.<\/p>\n\n<p class=\"wp-block-paragraph\">The flock quickly grew.<\/p>\n\n<p class=\"wp-block-paragraph\">Over the years, we learned to understand their needs, protect young plantings from the greediest animals, and face the many challenges involved in a type of farming that is still uncommon in the region.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A 100% natural diet<\/h1>\n\n<p class=\"wp-block-paragraph\">Our sheep live in semi-freedom on the farm\u2019s land.<\/p>\n\n<p class=\"wp-block-paragraph\">They naturally feed on:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>pasture grass;<\/li>\n\n\n\n<li>wild flowers;<\/li>\n\n\n\n<li>seasonal fruit;<\/li>\n\n\n\n<li>local vegetation.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">We do not use any industrial feed.<\/p>\n\n<p class=\"wp-block-paragraph\">Kep\u2019s mild climate allows them to live year-round in conditions close to their natural environment.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">Quality meat<\/h1>\n\n<p class=\"wp-block-paragraph\">Grass feeding directly influences the quality of the meat.<\/p>\n\n<p class=\"wp-block-paragraph\">It produces meat that is:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>tender;<\/li>\n\n\n\n<li>lean;<\/li>\n\n\n\n<li>rich in protein;<\/li>\n\n\n\n<li>naturally higher in omega-3;<\/li>\n\n\n\n<li>containing more vitamins A and E.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The result is tasty meat, appreciated by both private customers and several renowned restaurants.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">A trade learned day by day<\/h1>\n\n<p class=\"wp-block-paragraph\">When we started, nothing existed locally for sheep farming.<\/p>\n\n<p class=\"wp-block-paragraph\">Everything had to be invented.<\/p>\n\n<p class=\"wp-block-paragraph\">We gradually learned:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>shearing;<\/li>\n\n\n\n<li>care;<\/li>\n\n\n\n<li>breeding;<\/li>\n\n\n\n<li>flock management.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Our first sheep were even shorn\u2026 with simple office scissors.<\/p>\n\n<p class=\"wp-block-paragraph\">Today, our equipment has evolved, but our philosophy remains the same: to keep learning and improve our practices, season after season.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">Local, responsible production<\/h1>\n\n<p class=\"wp-block-paragraph\">Our meat is distributed through short supply chains.<\/p>\n\n<p class=\"wp-block-paragraph\">After becoming known through word of mouth, our farm now supplies both private customers and several renowned establishments.<\/p>\n\n<p class=\"wp-block-paragraph\">No middleman.<\/p>\n\n<p class=\"wp-block-paragraph\">No imports.<\/p>\n\n<p class=\"wp-block-paragraph\">Simply from producer to consumer.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h1 class=\"wp-block-heading\">An adventure that continues<\/h1>\n\n<p class=\"wp-block-paragraph\">Our farm continues to grow.<\/p>\n\n<p class=\"wp-block-paragraph\">Our goal is to soon reach around <strong>150 sheep<\/strong>, spread across two sheepfolds, one of which is dedicated to young animals.<\/p>\n\n<p class=\"wp-block-paragraph\">While deliberately remaining an artisanal operation, we want to continue showcasing the exceptional terroir of Kep-Kampot.<\/p>\n\n<p class=\"wp-block-paragraph\">Alongside pepper, crab, fleur de sel and durian, our sheep are now helping to write a new chapter in local agriculture.<\/p>\n\n<hr class=\"wp-block-separator
